Pad Thai by Steve Snodgrass
Goodness I adore Thai food! It’s an issue, my love for Tom Yum soup, in Barcelona, Spain, where I live. There aren’t too many Thai restaurants there. So during my visits to the United States I make a point to get my fill of Thai before heading back to Spain.
Sometimes there’s Thai where you wouldn’t expect it. Such is the case at Thai Princess in Hillsboro, Oregon. Right next to the Burgerville and McDuffy’s Tavern, this Thai spot is a hole-in the-wall, but loved by locals. While waiting for my to-go order on a Thursday night I saw about ten other to-go customers come and pick up their eats. I guess there’s no reason to be surprised, but I was, because honestly their location is not great.
Whether you take out or dine in at Thai Princess you can expect to pay about $20 a person and up. I did like their TomYum soup, but think they should strain it a bit better (too many chunks). I had the red curry and found it yummy and spicy. All in all, is this the best Thai food I’ve ever had? No. But it’s a darn good option in Hillsboro, where the culinary offerings are slim.
